Nutrition Courses offered through the James E. Van Zandt VA Medical Center
(March 13) ALTOONA, Pa. (WTAJ) — March is National Nutrition Month, and the food and diet team over at the James E Van Zandt VA Medical Center is here to tell us how they’re celebrating as well as some opportunities and resources that veterans can take advantage of through their programs.
Amanda Hite, the Chief of Nutrition and Food Services and Laura Vasbinder, Clinical Nutrition Manager at the VA stopped by to tell us more about their consultations, and sessions that they offer for veterans. The great thing is, most of these are co-pay exempt. Patients are really able to tailor their counseling according to their preferences and dietary needs whether that’s carb-conscious, diabetic friendly, or heart healthy!
Then we hit the kitchen with Chef Rubin Collins who also works as the Food Production Supervisor. Chef Rubin demonstrated how to make a healthy stir-fry! We started with a base of protein, in this case we used Chicken, but you can also use, tempeh, tofu, chickpeas, or even eggs! Then from there we sauteed up some fresh veggies! This not only adds a fun color component, but you know those veggies are loaded with nutrients that we all need more of!
Another really cool resource that is offered through the VA’s food and nutrition department is their ‘Healthy Kitchen Tasting Program.’ Through this program Veterans are able to virtually watch a live cooking demonstration to make a delicious and healthy meal. And don’t worry, the VA will even provide the pots, pans and utensils required to make it!
