Every December, we observe Worldwide Food Service Safety Month. It serves as a timely reminder to reassess and reinforce food standards in the foodservice industry. By doing so, we can ensure the impact of these standards on our health and well-being is positive. “My staff brings a unique blend of cultures, ideas, talents, and abilities to the table.” shares Marion VA’s Veterans Canteen Service Chief, Shelley Daniels.

“When it matters, they are there for each other and let me tell ya, they love the Vets. My staff works tirelessly to provide the Veterans good food!” shares Shelley with pride.

Shelley ensures us that “the main thing the VA does differently is on-going training. Its not just a one and done for us here.  We hold weekly training huddles focusing on a new food safety topic each week, we follow up after the training to ensure the training was understood and is being applied.”

When it comes to our Veterans, ensuring their well-being goes beyond just providing basic needs. Nutrition plays a crucial role in their overall health and recovery. Understanding and addressing veteran-specific dietary needs is essential in creating meals that are not only nourishing but also tailored to support their unique requirements.

“We work closely with the Registered Dietitians to provide our patients safe, delicious food, within the patient’s diet parameters. If the patient is wanting a food item that is outside of our available options, or it might be a tad out of their prescribed diets, we work with the Registered Dietitians to figure out how to make the patient happy, while meeting their dietary needs. This sometimes requires a lot of creativity on our part as the VA but it’s what we enjoy doing for our Veterans,” says Shelley. 

Menu planning for nutritional balance becomes paramount in this context. By carefully selecting ingredients and designing meals that encompass a variety of food groups, we can ensure that Veterans receive the necessary nutrients to promote healing and enhance their overall well-being.
